Apple Custard Tart

Apple Custard Tart

I made this for dessert a few days ago, and thought I would share it with you.  Doesn't it look great!
I found the Recipe over here, at Taste, and modified it accordingly.  Below is the recipe as I made it.

Ingredients
5 small cooking apples, grated
3 tablespoons sugar
1/2 teaspoon cinnamon
4 large (30/40cm)sheets of filo pastry (I used this recipe and it made just the right amount)
Custard

Topping
1 cooking apple, grated
1/2 teaspoon cinnamon

Method
Place 1 sheet of filo on a flat surface.  Brush lightly with oil, and top with second sheet.  Fold filo in half and cut into 6 squares.  Press each square into 1 hole of greased muffin pan.  Repeat with other sheets.  Fill with grated apple.  Sprinkle with sugar and cinnamon.  Bake for 10 to 15 minutes in a moderate until filo is golden.  Stand in pan for 2 minutes.  Transfer tarts to a wire rack.  Cool for 5 minutes.  Spoon custard into cases.  Top with apple and cinnamon.  Serve.

Heidi's Baking Challenge

I have decided to enter in Heidi's Baking Challenge.  The theme is muffins.  My entry is Chocolate Cinnamon Muffins.  Can you all please go over to her blog from the 17th of October and vote for me.  http://heidiscrafts.blogspot.com/
Here is the recipe, I found it in Love Food's recipe book 'Muffins'

Chocolate Cinnamon Muffins
Makes 12

11/3 cups Plain Flour
1/4 cup Cocoa Powder
1 tbsp Baking Powder
1/2 tsp Cinnamon
3/4 cup Brown Sugar
1/2 cup Chocolate Chips
2 Eggs
1 cup Milk
85g Butter, melted

Mix flour, baking powder and cinnamon together.  Stir in sugar and chocolate chips.  Lightly beat egg in seperate bowl, then mix in milk and butter.  Make a well in the centre of dry ingredents and pour in beaten liquids.  Stir gently until just combined; don't over mix.  Spoon mixture into muffin tray, lined with paper cases.  Bake in preheated moderate oven for 20 minutes.  Leave to cool, then enjoy.

Note: I have modified this recipe to suit my taste, so it is not the same as in the book.

Cooking!!! I love cooking, it is a talent and a hobby of mine.  I could not find any pictures of me cooking, though I have heaps of the Adorables cooking.  Here are some of my creations.

Day 4

My Favourite Recipe

Chocolate Slice
125g Butter (softened)
1/2 cup Sugar
1 Egg
1 tsp Vanilla
1/2 cup Plain Flour
1/2 cup S.R. Flour
2 tbsp Cocoa

Cream butter and sugar.  Add vanilla and egg then beat.  Add all flour and cocoa and mix well.  Place mixture into a well lined slice tray and bake in a moderate oven for 20 minutes.  When cool, ice with chocolate icing (recipe below.) 

Chocolate Icing
1 1/2 cups Icing Sugar
1 tbsp Cocoa
2 tbsp Butter
Hot Water

Sift icing sugar and cocoa into a bowl.  Add butter, then cream the mixture.  Add water and mix well before adding more.  Once you have a nice consistency, spread on the slice and place in the fridge to set.  (This slice is also nice with hundreds and thousands sprinkled on top.)  Cut into squares when the icing has completely set.  ENJOY:)

Anzac Biscuits

Anzac Day came and went without any mention on my blog.  But now one of the Masterchef contestants is showing you how to make Anzacs our way. 
 Adding rolled oats.
 And flour.
 Mixing
 Adding in the butter mixture
More mixing.
 The final finished product.

Now, for the recipe, if you really want it??

Ingredients
1 cup Rolled Oats
1 cup S.R. Flour
1 cup Raw Sugar
1/2 cup Coconut
125g Butter
3 tbsp Water
1 tbsp Golden Syrup        

Method
Combine butter, water, and syrup in a saucepan and melt over heat.  Watch this closely as it can boil over.  Combine rolled oats, flour, sugar and coconut together in a bowl.  Mix well.  Add butter mixture to dry ingredients.  Mix together well and then press mixture into a greased or lined slice tray.  Bake in a moderate oven for 15 minutes. Cut into pieces when it has cooled sufficiently.  We always double this recipe so we get two trays of biscuits at a time.  Warning:  Don't leave cut biscuits on the bench too long.  There will be none left. :)

Adorable Masterchef

Here are some photos that have been a little while coming but are here none the less.  And this is how it started.  Two little boys wanted something to do, and I wanted to cook-again.  But they thought they could cook, so we started Adorable Masterchef.  Here are the photos.
